Gold Kūmara (most commonly the native New Zealand Toka Toka Gold variety) delivers a distinctly sweet, slightly nutty, and mellow flavour profile paired with a soft, light, and fluffy texture when cooked.

- Sweetness: It is moderately sweet. It has a noticeably sweeter taste than standard Red kūmara (Owairaka Red), but it is not quite as intensely sugary or syrupy as Orange kūmara (Beauregard).
